That trust gets built from unglamorous things. A profile that has been complete for a long time rather than filled in last Tuesday. Reviews arriving steadily instead of six in one week and then nothing. Details that match on every site that mentions you, including the old directory listing you forgot existed in 2017 with your previous phone number on it.

The commuter thing
A lot of Grantham works elsewhere. The station puts London a bit over an hour away, and plenty of people are on a train before eight and home after six.
They are not browsing the high street at lunchtime. They are searching on a phone, at speed, usually the night before they need something, and booking whoever makes it easiest. If your website makes them ring during working hours to find out a price, they will book somebody else while still on the platform.
